Directions

Step 1

Marinade the Chicken

  1. In a bowl, mix all the ingredients for the marinade.
  2. Add the chicken pieces, coating them well with the marinade.
  3. Cover and refrigerate for at least 1 hour, or preferably overnight for better flavor.
Step 2

Cook the Chicken

  1. Preheat the grill or oven to 200°C (400°F). You can also use a stovetop grill pan.
  2. Thread the marinated chicken onto skewers and grill for 12–15 minutes, or until cooked through. Alternatively, cook in a pan with a little oil until golden and cooked inside.
  3. Remove the chicken and set aside.
Step 3

Prepare the Tikka Masala Sauce

  1. Heat oil or ghee in a large pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and green chili, and sauté for 2–3 minutes until fragrant.
  3. Stir in the pureed tomatoes, and cook for 5–7 minutes until the tomato mixture thickens.
  4. Add red chili powder, coriander, cumin, turmeric, garam masala, and kasuri methi. Cook the spices for another 1–2 minutes.
  5. Add the grilled chicken pieces into the sauce, and stir well to coat.
  6. Pour in the cream and simmer the curry on low heat for 10 minutes, allowing the flavors to meld together.
  7. Taste and adjust seasoning with salt if needed.
Step 4

Garnish and Serve

  1. Garnish with freshly chopped cilantro.
  2. Serve hot with naan, rice, or roti.
